This is an easy mint ice cream recipe that is a huge favorite in our house. We always add semi-sweet chocolate chips that we grind up a bit in the blender but those are optional. This flavor with the chocolate is commonly knows as “mint chip” and you will love this quick and easy at home version!
Please Note: All of my recipes make approximately one quart of ice cream.
1/4 cup semi sweet chips, ground in blender*
3 cups heavy cream
1 cup whole milk
1 1/4 tablespoon peppermint extract*
five drops natural green food coloring
The chocolate chips and the food coloring is optional of course, up to you!
As with all of my recipes, feel free to switch around the four cups of dairy how you like. Two cups of heavy cream with two cups of milk, etc. Whatever you like will work as long as you have four cups of dairy.
Instructions: Pour cream and milk into a large bowl and whisk sugar into it until dissolved. Add all the other ingredients except the chocolate chips. Pour into your ice cream maker and mix until ice cream (takes about 20 minutes in mine, but yours may vary) and when it is thick stir in the chocolate chips. Then transfer to a freezer container and freeze until firm and scoopable.
My ice cream maker is a simple drum attachment that goes on my KitchenAid mixer that I store in the freezer. I’ve used others and like the simplicity of this one and how it uses an appliance I already have. Most ice cream makers make very runny “soft serve” style ice cream. They need to be frozen in a container (I use a glass pyrex quart dish) for a few hours to let them set completely. This doesn’t affect the texture, it comes out creamy and not icy.
