Simple Vanilla Icing Recipe

This vanilla icing recipe is what I use on my cut out sugar cookies. It is very sweet, so a little goes a long way. It results in an icing that looks smooth but is still slightly moist, it doesn’t get too hard.

Simple Vanilla Icing Recipe for Cookies
1 cup powdered sugar
1 teaspoon vanilla extract
2 tablespoons boiling water

Instructions:

Boil some water and then shut off. Add the two tablespoons of hot water to the sugar and then stir in the vanilla. Stir until creamy and well blended and finally add a couple drops of food coloring.

Depending on your humidity and how packed or loose your sugar was, this recipe is easy to adjust, just add a tad more water if it is too dry or a bit more sugar if it is too runny. Simple!

Use the frosting right away as it will start to set as it cools. I will make a triple batch of this when I make a full batch of my cut out cookies but I do it in stages as I like to put it right on the cookies when it is smooth and runny so it hardens all glossy and pretty.

You can do variations of this recipe with other flavors, lemon flavoring oil is particularly yummy on cut out cookies too!
